Peanut Butter and Cranberry bars

These tasty Peanut Butter Cranberry Bars are full of healthy protein and fiber. They’re a true treat that’s not loaded with sugar. They are so easy to grab and go! When you make it at home, you know it’s going to be good!

*Use a natural chunky peanut butter that spreads easily. This will make your Peanut Butter Cranberry Go Bars chewy.

This yummy recipe will serve 16.

Preparation Time: one hour and thirty minutes

Ingredients

One cup of regular rolled oats
Olive oil spray
3 tablespoons of flax seeds
1/3 cup of oat bran
One cup of whole wheat flour
One large egg
½ teaspoon sea salt
½ cup of dried cranberries
½ teaspoon of baking soda
½ cup chopped roasted peanuts
½ cup finely chopped dried Mission figs
¾ cup natural chunky peanut butter
¼ cup Coconut or Almond Milk
½ cup of raw honey
One tablespoon fresh lemon juice
Fine-shredded zest of one lemon

Directions:

1. Place plastic wrap along the inside of a 9 X 13 inch, with the plastic hanging over on the 9-inch sides. Then, coat it with Olive oil spray. Stir flour, oats, oat bran, baking soda, oat bran, peanuts, salt, figs and cranberries in a large bowl. Mix together thoroughly.

2. In a stand mixer bowl, mix the peanut butter, egg, honey, milk, lemon zest, and lemon juice until thoroughly blended.

3. Add the flour mixture to the peanut mixture. Stir until completely blended. Next, scrape the dough into your pan. Have your fingers wet, and fill the pan with the blended mixture. Pat it evenly.
Chill the dough until it is firm. This requires about a half-hour before you can enjoy this tasty treat.

4. Meanwhile, preheat oven to 300°. Invert pan onto a work surface, lift off pan, and peel off plastic. Using a bench scraper or knife, cut straight down lengthwise through middle, then crosswise to make 16 bars, each 1 1/2 in. wide. Place bars about 1 in. apart on a baking sheet lined with parchment.

5. Bake bars until lightly browned and somewhat firm to touch, about 20 minutes. Remove from oven and let cool completely.

Make ahead: Store airtight up to 2 weeks or freeze.
